CANADA DAY MAPLE SYRUP BREAKFAST




Happy Canada Day!

We love a good celebration, and I love the idea of a delicious breakfast for Canada Day. We usually do a bbq in the evening, but something first thing in the morning to get us going is a win for my family.

Pancakes are always a favorite with my little ones, and something as simple as adding a few festive toppers is enough to make them even happier and more fun.

We love eating ours with plain yogurt, strawberries and maple syrup. Its so yummy!







I'm adding our simple pancake recipe here that we all love. We have it almost every weekend and nobody ever gets tired of it. And its really simple to make too! (I'll double the recipe if Im making it for guests or want leftovers)

EASY PANCAKES

2 cup flour
4 tablesoon sugar
4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cup milk
2 tablespoon melted butter
2 eggs
2 tablespoon vegetable oil

DIRECTIONS

Combine flour, sugar, baking powder and salt into a bowl. 

In a seperate bowl mix together milk, butter, eggs and vegetbale oil. Once combined, add in the dry ingredients. Mix together until combined.



I found the cutest printables for the maple leafs that work perfectly for Canada Day. (I could see them being so cute for Thanskgiving too!)

SPRINKLES ICE CREAM CONES FOR CANADA DAY & 4TH OF JULY


The official kick off to summer always feels more complete after the Canada Day long weekend. With only just over a week away, I wanted to share a fun and festive treat to bring out during your long weekend celebrations.

As I get older and our family grows, I start to realize how fortunate we are to grow up in our Country. Canada's vast and beautiful scenery, along with the freedom and rights we have here make me so grateful. I'm so thankful to call this country my home.

Truly, the best part of celebrating Canada Day are with the people who you love the most. We're still figuring out what we'll do this year, but we usually spend it with our family. Usually it involves a bbq and good food!






I'm really excited to be sharing some really easy and fun sprinkles ice cream cones for Canada Day (or easily adaptable to the 4h of July for our neighbours to the south!) They'll be perfect for an afternoon treat or dessert after a bbq!






INGREDIENTS

sugar cones
white chocolate chips
sprinkles
Ice Cream













RECIPE

1. Melt your white chocolate chips in a bowl in the microwave.

2. Take your sugar cone and dip it into your chocolate mix. (I found tipping the bowl at an angle allows you to coat your cones a bit better)

3. Add your sprinkles! We used a combo of red and white to make it fit our theme. American friends, I just added blue to the mix!

4. Let them cool slightly until they are set well.

5. Scoop your ice cream into the cones! If you're using this for a party dessert, you can pre prepare your ice cream to save you time! Just scoop them into balls and place them onto a flat sheet and freeze them overnight. Then when you're ready, grab them from the freezer. They'll be frozen into scoops and will fit on the cones really easily and stay frozen much longer.

SUMMER DAYS

This summer so far has been so amazing. Most days we're around the house. The kids are playing inside and there's been lots of time spent outside too. We've been working on our outside spaces and we've been enjoying our days out there alot more. Annie is on a really good napping schedule and it's just been so great.

But we've been making a point to go out on some adventures, and those days have been so memorable. Most days I'm on my own when we head out, which can be really fun, but also tricky with a baby. There is a big span of needs from all the kids.




But when we stumble on a beautiful backdrop like this, it makes me so thankful for these four little ones.

END OF HOMESCHOOL


We've reached the end of our homeschooling journey. My kids are beyond happy...the end of school...even homeschool is something to celebrate. I can't believe that we did 11 weeks of homeschooling. It's been such an adventure with ups and downs, and I hope that we never forget what it has been like.





Both bigger kids had a tough start to learning. There was a steep learning curve to figure out the technology involved. But each week we got more and more familiar, and now Ben is able to do all the work independently on Google Classrooms. I still have to guide him, of course, but he can do all the classwork on his own. His teachers were amazing at sending just the right amount of work to keep them busy. I'm really surprised at how he was able to time manage much better than I thought. Each Monday they would get their lists of assignments to complete, and we broke it down day by day to see how much he had to complete to finsih everything by Friday.

Maddie had a harder time with at home learning. She truly missed her teacher in person and all her little friends. She loves the routine of getting ready for school, being with her friends and socializing. With Maddie's school work, I had to be alot more hands on. Loading the videos for each day's assignemnts and helping her through the work. Once she got working, I could leave her for 10-15 min at a time depending on what she was working on. Her reading has been much improved, but I'm hoping we will continue to work on it over the summer.

And we did lots and lots of google classroom calls. The big group calls were difficult sometimes as there were so many kids, but both my kids loved the smaller more intimate groups. They always felt refreshed and so happy after seeing their classmates and chatting.

Our school issued our Family Fridays which was our favorite weekly activity! No school work was given, and we were encouraged to spend time together as a family. How amazing is that! We spent our Fridays enjoying beaches, parks, picnics, movie afternoons, baking, and outdoor time together. We loved checking weather reports during the week and then deciding what we should do together as a family.

All in all, this experience was something I never thought I'd get a chance to do. Homeschooling with the big kids, Ellie working on her Kindergarten books & journal and little Annie trying to get some attention. I loved that the bigger kids got to be home during Annie's first year (I keep thinking that these little memories of all 4 of them will be SO cherished!) and how lucky we all were to have a safe and happy to home to be in.

Our school had an end of the year parade, and the kids absolutely loved it. We drove around the school (during our specific sign up times) and got to say bye to our principal who is retiring, and all our teachers. Such a sweet memory for the end of school.

And now we can't wait to do ALL the summer things! Here's to looking forward to all our summer memories!
